This product originates from mountain farming and is a limited production of mid-early harvested olives. It finds its roots in the Koroneiki olive variety and is cultivated in the fields nestled within the Psiloritis mountains of Crete, Greece. Our process begins by carefully selecting only the green olives, which are then cold-extracted to create this unique Cretan extra virgin olive oil from mountain farming. To ensure its preservation, the oil is stored and safeguarded in stainless steel tanks equipped with a nitrogen system.
As a result, this olive oil is rich in antioxidants, particularly the beneficial polyphenols that support human health.
