We went to our self-owed land, which had remained fertilizer-free and uncultivated for years; that is where nature itself provided us with all the answers we were looking for. All we had to do was to take advantage of the unique micro-climate and focus on the herbs that grew there naturally. We began a systematic and organized organic farming venture.

Apart from being well-suited to Crete's microclimate, the flavor, robust health benefits, and long-standing traditional use were crucial factors guiding our choice of herbs to cultivate.

Our expertise empowers us to methodically oversee both the production and manufacturing processes, ensuring top-notch quality and safety at every step. We maintain control over each stage of production. By investing in the knowledge and skills of young individuals and collaborating with specialized experts, we successfully brought Tofillo to life.

Tofillo is a family business, tofillo is a collection of organic Cretan herbs, tofillo are natural herbs and greens of the Mediterranean, tofillo is culinary herb mixtures.

The process

• Herbs are delivered on the same day they are collected and promptly transferred to the dryer. Here, they start their natural drying process within a dark, well-ventilated space.

• Once the drying process is finished, the herbs are temporarily stored in ideal conditions to maintain their quality until the processing phase begins.

• As per requirements, the herbs undergo various processes such as chopping, defoliation, and sifting. They are then carefully packaged in suitable bags and boxes, ready for their final destination in Greek and international markets.

• All procedures are performed manually, with special care and passion so that each package also includes a little of our passion and love for our products.

The selection of herbs for the creation of culinary herb mixtures is done with great care and their proportion is larger than that of spices. The spices are supplied by certified, reliable companies and we ensure that they are accompanied by the relevant certificates required by greek and european legislation. All packages used are certified and suitable for food.
